Delicious Chicken Enchiladas


Tonight I made Chicken Enchiladas for dinner.

I love them because they are yummy and so easy to make.

No standing over the stove stirring.

You make it. Stick it in the oven. And your done!

Preheat the oven to '375

Ingredients:
Chicken (As much or as little as you like)
1 c. Chopped Tomato
1 c. Chopped Green Pepper
1 Onion
2 cans of Cream of Chicken soup
1 medium tub of sour cream
1 tsp. of poultry seasoning
1 1/2 c. of cheese. 1/2 c. set aside

6-8 large flour tortillas

Instructions:

In a pot boil the chicken. In a separate bowl add the rest of the ingredients and mix well. Cut the cooked chicken into desired size pieces and add to the filing mixture.

Fill the Tortilla with the the filing then fold over the tortilla into a roll and place it in the pan. After the pan is full of the rolled torilla's, pour any remaining filing over the top, then sprinkle remaining 1/2 cup of cheese on the top.
